This Greek-inspired chicken will take you to a whole new world of keto recipes that are easy to make and delicious.
The combination of spices, fresh vegetables, and tasty olives will transport your taste buds to a greek island getaway. If that doesn’t sound like something you’d want to eat then we don’t know what does!
Ingredients:
– 1 pound of chicken breast, cut into small pieces
– 1 green pepper, chopped into small pieces
– 1 onion, chopped into small pieces
– 2 cloves of garlic, minced
– 3 mushrooms, sliced (more or less depending on size)
– 10 olives (black or kalamata), sliced in half lengthwise
– 1 teaspoon dried oregano
– 4 tablespoons Virgin olive oil
– Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pan over medium power.
- Add the chicken and cook until browned on both sides, about 5 minutes per side. Remove it from the pan and set it aside.
- Add the chopped onions and minced garlic to the pan and cook them until they are soft and translucent for about 5 minutes.
- Add the mushrooms, and peppers, to the pan and cook them for another 3 minutes or so until the vegetables have softened slightly but still retain their color.
- Place the chicken in the pan again and add oregano, salt, and pepper to taste and mix together to blend the flavors.
- Serve hot with some Greek yogurt on top if desired!
This dish has all the flavors of a traditional Greek recipe but without carbs. It’s perfect for those who are on a strict keto diet, but you can also serve it with a side of potatoes or rice if you want some extra carbs in your diet.
